1. Thandai Ice Cream
For Thandai paste, soak 1 tbsp fennel seeds, 1 to 2 peppercorns, and 2 tsp poppy seeds in warm water for 30 minutes. After that drain its water and add little saffron, 6 blanched and peeled almonds, and a pinch of cardamom powder to it. Blend the mixture until smooth. Add rose water if required. Next, heat 2 cups low fat milk in a flat pan. When it begins to boil, add the 2 tbsp cornflour mixture (corn flour and ½ cup low-fat milk). Keep the mixture on simmer and stir until the mixture coats the back of a spoon. Once done, let it cool and after that add 3 to 4 sachets of sugar substitute and thandai paste. Refrigerate for at least 4 to 6 hours. Once the ice cream sets, serve the desired number of ice cream scoops to your family.
2. Mawa Ice Cream
Cook ½ cup Khoya on a low flame until it turns light brown in color. Add the dry fruits (almonds, cashew, and pistachios) and ¼ cup grated coconut to it and mix. Prepare a mixture of 2 tbsp custard powder and 2 tbsps of milk. Set the custard mixture aside. Add 2 cups milk to the dry fruit khoya mixture and stir the mixture until it boils. Reduce the flame to low and add custard mixture to it. Once the mixture is thick, add 3 tbsp honey and ½ cup dates syrup to it. Turn off the flame and let the mixture cool. Now add 200 ml fresh cream and blend to mix everything well. Keep the mixture in freezer and after every 2 hours, stir the semi set ice cream well. Repeat this step for about two more times and then allow it to set for another 2 hours. Once the mixture is set, serve and relish the ice cream.
3. Almond and Lotus Seed Ice Cream
Fry 1 cup lotus seeds in ghee for about 2 minutes. Cool and then grind until you get a fine powder. Lightly roast 1 cup almonds for about a minute and grind it until you get fine powder. Prepare the mixture of 3 tbsp badam milk powder and ½ litre milk. Add the powdered lotus seeds and almonds to the milk. Boil the mixture on medium flame and stir continuously until it thickens. Add 200 ml condensed milk and after one final boil let the mixture cool. Pour the mixture in a vessel and freeze it for an hour. After an hour, stir the mixture and again let it rest for another hour. Repeat the step two more times and allow it to set for another 2 hours. Once the mixture is set, serve and relish the ice cream.
