Easy Recipe to Make the Perfect Chocolate-Peppermint Ice Cream Scoop

1.  Ingredients for:

      Chocolate Liquor

⅓ cup water
⅓ cup cocoa
⅓ cup sugar
1 ounce dark chocolate

      Ice Cream Base

            1 ¾ cup cream
½ cup sugar
1 ½ cup milk
¼ teaspoon salt
1 tablespoon starch (corn or tapioca)
¼ vanilla extract
1 ½ teaspoon peppermint extract

2.  Steps to Follow

       Set aside a bowl filled with ice water
       Start by making the chocolate liquor. Take a saucepan and mix water, cocoa powder, and ⅓ cup sugar.
       Place the saucepan over low-medium heat and bring it to slow boil. Make sure you continuously whisk the mixture when being heated. As soon as bubbles form in the mixture, remove it from the heat and add dark chocolate. Let the mixture sit for around 2 minutes. After 2 minutes, stir the chocolate liquor until the texture becomes smooth.
       Take another medium-sized bowl. Add salt and the chocolate liquor. Make sure you keep whisking the liquor while adding the salt.
       Next, take a small bowl and whisk 2 tablespoons of starch and milk. Set the mixture aside.
       Take another saucepan and add the remaining cream, ½ cup sugar, and milk. Place the saucepan on low-medium heat. Bring the mixture to boil, and cook it for about 3 minutes, until the sugar dissolves completely.
       Remove the milk mixture from the heat and mix it with the starch mixture. Return the mixture to boil and cook it over a slightly high heat. For about 1 minute,, cook the mixture till it’s texture becomes  a little thick.
       Pour the thick mixture into a medium-sized bowl and add chocolate liquor. Whisk thoroughly to make sure both mixtures are perfectly mixed together.
       Next, set the bowl aside in the ice water for about 20 minutes to cool. Keep whisking the mixture occasionally. Add peppermint and vanilla extract to the mixture. 
       Finally, cover the mixture and refrigerate it until it is completely chilled, for about 4 hours or overnight.  A perfect chocolate-peppermint ice cream is ready.
